Fine Cinnamon Waffles

These fine cinnamon waffles are very delicious served with tea. They also taste great as a decoration for ice cream. However, this historical recipe is best baked over an open fireplace in old waffle irons.

Duration: 45 minutes

Amount: Around 40 pieces

Ingredients:

For the dough:

250 grams of butter

250 grams of raw cane sugar

Some cinnamon, to taste

3 eggs

300 grams of flour

Flour for hands

For the waffle iron:

Bacon rind or oil for the iron

Method:

  1. Gradually stir the dough ingredients with a wooden spoon until smooth.
  2. Gradually add the butter, then the sugar and finally the eggs.
  3. Then the cinnamon and finally the flour.
  4. From this supple mass form small walnut-sized balls with flour-dusted hands.
  5. Heat the waffle iron, rub both sides with a fresh bacon rind or, alternatively, add a little oil.
  6. Place the dough ball in the middle of the iron and carefully press together. Bake the waffles golden yellow to light brown.
  7. Waffle irons with long handles are best for open fireplaces, that way you can turn the waffle iron over the fire again and again.
