The potato cakes are made from a mixture of boiled potatoes, spelt flour, almonds and eggs. They taste similar to Kaiserschmarrn and are served warm with icing sugar. An ideal use for leftover jacket potatoes.
250 g potatoes, boiled
3 eggs
10 almonds, freshly ground
125 millilitres milk
1/2-1 teaspoon salt
250 grams spelt flour type 630
1 sachet baking powder
1. Grate the cooked potatoes on a grater and place in a large bowl.
2. Add the eggs and grated almonds.
3. Mix the flour with the baking powder and stir into the potato and egg mixture.
4. Leave to soak a little.
5. Meanwhile, melt the clarified butter in a pan.
6. Scoop out portions of the potato cake batter with a tablespoon and fry them in the clarified butter on all sides.
7. Serve dusted with icing sugar.
Tip: The egg whites can also be beaten until stiff beforehand and then folded into the mixture last. Any kind of compote is suitable as a garnish.
