This nutty banana bread is light and fluffy and tastes incredibly delicious with its chocolate pieces and chocolate icing with gingerbread spice. Banana bread caused a furore in Germany, especially since the 1980s. It is ideal for making profitable use of overripe bananas.
For the dough:
250 grams wholemeal spelt flour
250 grams light spelt flour
18 grams of baking powder (1 packet)
300 grams raw cane sugar
50 grams of oil
4 free-range eggs
200 grams walnuts
150 grams baking chocolate in bigger chunks
5 ripe bananas
For the topping:
150-200 grams melted baking chocolate
1 teaspoon gingerbread spices
1. Mix the flour with the baking powder.
2. Add the sugar, the oil, the eggs, the walnuts, the chocolate and the bananas and stir it all together with a wooden spoon.
3. Just stir as long until all the ingredients are well combined.
4. Fill the dough in two baking tins and bake in the preheated oven by 180 °C for 55 minutes.
5. Let the cake cool down and take it out of the tin.
6. Pour some melted chocolate mixed with some ginger spices over the cake.
