This apple sauce king cake is the ideal cake for using up apple sauce leftovers. It is a batter made from butter or oil, sugar, vanilla sugar, eggs and apple sauce, and it is baked in a king-size loaf pan. It is incredibly moist, and you really have to be careful not to eat it all at once. It tastes best when it has completely cooled down.
200 grams softened butter or 188 millilitres vegetable oil (e.g. Alba oil)
200 grams of raw cane sugar
1 tablespoon vanilla sugar
4 organic eggs, medium-sized
250 grams of apple sauce
1 lemon, untreated, zest and juice
1 pinch of salt
1 teaspoon of cinnamon
350 grams spelt flour (type 630)
1 packet of pure cream of tartar baking soda
1-2 tablespoons of almond flakes
1. Cream the softened butter or oil with the raw cane sugar and vanilla sugar.
2. Gradually add the four eggs and mix well.
3. Now add the apple sauce, lemon juice and lemon zest and fold in.
4. Mix the sifted flour with the baking powder, cinnamon and salt and stir into the egg mixture.
5. Grease the king cake tin well with oil or butter, dust with flour and fill in the batter 3/4 high.
6. Sprinkle with flaked almonds and bake in the preheated oven at 180°C for 1 hour.
