When autumn arrives, so does the desire for hearty dishes. This onion tart is a succulent cake made from onions, bacon, Emmental cheese and cream.
For the dough:
500 grams flour
8 tablespoons of water, ice cold
1 pinch of salt
250 grams butter, cold
For the filling:
1400 grams vegetable onions
60 grams butter
200 grams of bacon
300 grams Emmental cheese
500 millilitres of cream
4 eggs
salt
pepper
1. Chop the flour, water, salt and butter on the work surface with a knife and then knead quickly into a smooth dough.
2. Leave the dough to rest in the fridge for 30 minutes.
3. Meanwhile, peel the onions and cut into thin slices.
4. Finely dice the bacon.
5. Melt the butter in a pan or roasting tin and fry the bacon in it.
6. Add the onions and sauté while stirring.
7. Grate the cheese, add the cream and eggs, season with salt and pepper and stir.
8. Add the onions.
9. Roll out the pastry to the size of the baking tin and spread the filling on top.
10. Bake on the lowest shelf at 200°C for 45 minutes.
