Clemens Wilmenrod, originally from the Westerwald in Central Hesse, actually called Carl Clemens Hahn (1906-1967), was an actor by profession. From 1953-1964 he was the first German TV cook to be in the NWDR and WDR show "At the table, please, in ten minutes". He was assisted by his wife Erika and the fast roaster of the "Heinzelkoch" brand. His imaginative name creations and stories of alleged travels and the culinary delights there brought him enormous popularity. This also made it interesting as an advertising medium for various food companies and kitchen appliance manufacturers. One of his simple dishes is the Hungarian sauerkraut salad, which my mother often made and whose origin I only found out by leafing through Wilmenrod's cookbooks.
For the salad:
500 grams of sauerkraut
1 apple, grated
1 onion, grated
1 red pepper, diced
For the sauce:
1 tablespoon of white wine vinegar
250 grams of yogurt
Salt
Pepper
1 teaspoon honey
1. Put the sauerkraut in a bowl.
2. Quarter the apple, grate finely on a glass grater up to the skin and mix into the sauerkraut.
3. Finely chop or grate an onion and fold in as well.
4. Wash the peppers, remove the seeds and add them to the salad, cut into fine cubes.
5. Now stir in the salad dressing.
6. Mix white wine vinegar, yoghurt, salt, pepper and honey well in a separate bowl and fold it into the salad.
