This Hungarian soup is from my mother's handwritten recipe collection. Usually this bean soup is traditionally made with Hungarian Kolbacz sausages, but it is also very nice without any meat. If you cannot find any colbacz sausages, try this soup with Spanish chorizos or Wiener sausages. This Hungarian bean soup is one of those soups that one likes to eat and vary over and over again.
3 tablespoons of olive oil
250 grams of onions, chopped
750 grams of paprika, cut into strips
800 grams of canned chunky tomatoes
2 Kolbacz sausages, sliced
800 grams of canned white beans
Some tomato ketchup
Smoked Chipotle Tabasco Sauce
Paprika powder, sweet
Paprika powder, hot
1-2 cubes of vegetable stock
Pepper, salt
Pinch of sugar
Parsley
1. Heat the olive oil in a pot.
2. Steam the finely chopped onions in the oil until translucent.
3. Cut the peppers into strips, add them to the onions in the saucepan and cook well.
4. Add the chunky tomatoes with their liquid.
5. Then the drained white beans and if you like the sliced sausages.
6. Season to taste with the ketchup, the Tabasco sauce and the spices.
7. Serve sprinkled with chopped parsley.
