Rose Syrup

We value roses very much because of their variety of colours and their scent. Scented roses are particularly suitable for this syrup and the resulting colour is beguiling. It tastes good in a glass of sparkling wine as well as in a glass of mineral water. Enjoy a mild summer evening with this special syrup or preserve the taste of summer into deep winter. This syrup can be kept for at least 12 months if properly processed, cool and dark.

Duration: Approx. 30 minutes (plus 24 hrs resting time)

Amount: 1/2 litre

Ingredients:

4 handful or 50 grams of rose petals

500 millilitres water

350-370 grams raw cane sugar

2 lemons, the juice

1 organic orange, thinly cut into slices

Method:

1. Boil the water together with the sugar in a saucepan.

2. Place the petals in the still warm brew.

3. Cover with the orange slices and leave to stand for at least 24 hours covered.

4. Strain the syrup through a fine sieve and briefly bring to the boil again.

5. Pour into a sterilised 1/2 litre bottle or two 1/4 litre bottles and close immediately.
