Peppernuts

If you want to know what Christmas tastes like, you should bake peppernuts. The combination of flour, butter, honey, candied oranges and lemons as well as the addition of spices from distant countries make this biscuit, which is easy to make, absolutely aromatic. In the handwritten and printed historical cookbooks of the 19th century, one can discover many variants of peppernuts. Often eggs, yellow or fine sugar, potash as a raising agent, sometimes nutmeg, mace, and anise, as well as a pinch of white pepper are added. You can cover them with icing or chocolate glaze after baking, but to be honest, they taste great even without any icing.

Amount: 2 baking trays 30 peppernuts each

Ingredients:

For the dough:

180 grams of butter

4 tablespoons of sugar

160 grams of honey

400 grams of flour

1 packet of baking powder

½ teaspoon cardamom

2 teaspoons of cinnamon

1 large pinch of ground cloves

100 grams of finely chopped lemon peel

100 grams of finely chopped orange peel

For the glaze:

Chocolate or icing if required

Method:

1. Knead all the ingredients together in a bowl and let them stand in a cool place for 1-2 days.

2. Form flat balls and place the "nuts" on a floured baking tray.

3. Bake at 180 ° C on the middle rail for about 20 minutes.

4. If necessary, spread with chocolate or icing. However, they taste very good even without the glaze.
