Grandma's Potato Salad

This recipe comes from my grandmother Elli and was brought to our table every Christmas on Christmas Eve. It is still a tradition in many households in Germany to eat potato salad with hot sausages on December 24th. This Christmas salad is easy to prepare in advance, it is filling and simply tastes inimitable. Memories of Christmases of the past are awakened.

Ingredients:

1.5 kilograms of potatoes, cut in strips

1/8-1/4 litre vegetable broth

4 herring fillets, in strips

4 large pickled gherkins, diced

4 eggs, boiled, diced

200 grams of cooked ham, diced

3-4 apples, in cubes

1/8-1/4 litre of sweet cream

1 tablespoon lemon juice

1 tablespoon mayonnaise

1 teaspoon mustard

1 pinch of sugar

Herbal Salt

Black pepper

Method:

1. Boil the potatoes the day before and cut them into sticks after they have cooled well.

2. Pour the vegetable broth over the potatoes and leave to soak overnight.

3. The next day, cut the herring fillets into strips.

4. Dice the pickled gherkins.

5. Now push the boiled eggs back and forth through an egg harp.

6. Divide the cooked ham into equal pieces.

7. Finally, dice the cored apples with the peel.

8. Place everything in a large bowl.

9. Mix the remaining ingredients into a salad dressing, pour over the salad and carefully fold in.
