Lye rolls are one of the favourite rolls in our family and can be quickly made by yourself. They also taste brilliant made with Lievito Madre instead of fresh yeast or you try them the vegan way by replacing cow's milk with almond or oat milk. I simply make the lye from water and 50 grams of baking soda. Soak the rolls in the lye beforehand and they will turn into a crispy dark brown in the oven. That's how they get their incomparable taste. There are many legends about the invention of the pretzel or lye pastry. One of the stories spoke of the mishap of a baker who accidentally dipped his pretzels not in a sugar solution but in caustic soda, which was normally used to clean the bakingtrays. What is certain, however, is that this lye pastry, whether as a pretzel or in the form of a roll, tastes very good.
For the dough:
2 cubes of yeast
Pinch of sugar
1.2 kilograms of wheat flour (type 550 or 1050)
4 teaspoons of salt
800-850 millilitres of milk / plant milk
For the lye:
500 millilitres of water
50 grams of baking soda
To sprinkle:
Coarse-grained salt
1. Warm the milk slightly.
2. Dissolve the yeast with a pinch of sugar in a little of the lukewarm milk in a cup and wait until it foams.
2. Sift the flour into a bowl. Make a well in the middle, sprinkle the salt on the edge and pour in the milk-yeast mixture. Dust with flour and let rise for 15 minutes.
3. Stir the rest of the milk into the flour and knead the dough thoroughly and shape it into a large ball of dough. Cover with a kitchen towel and let rise for another 30 minutes in a warm place.
4. Divide the dough ball into about 24 equal-sized pieces and shape them into rolls.
5. Meanwhile, heat the baking soda in the water and bring to the boil. Use a slotted spoon to dip the pieces of dough into the lye for about 20-40 seconds and place on a lightly greased tray or lined with baking paper.
6. Use scissors to cut the top of the rolls crosswise and sprinkle with coarse salt.
7. Preheat the oven to 250 degrees.
8. Bake the rolls for 15 minutes until they are dark brown
