Green Pancakes

These "green pancakes" are potato pancakes with lots of fresh, green herbs. Whether chives, parsley, goutweed or nettle, the flavours vary, but are always delicious and crispy.

Ingredients:

1 kilogram of potatoes

4 tablespoons milk

1 level teaspoon of salt

2 medium eggs

3 heaped tablespoons spelt flour

1-2 bunches of chives

Method:

1. Wash, peel and grate the potatoes on a grater.

2. Place in a sieve and strain off the excess moisture.

3. Add a little milk, salt, eggs and spelt flour to the potatoes.

4. Finely chop the chives or other herbs and add to the potato mixture.

5. Stir the mixture well.

6. Meanwhile, melt the clarified butter in a pan and gradually fry the green pancakes on both sides until golden brown.

7. They taste very good on their own, but also with a green salad.
