Fellingshäuser Sausage Goulash

The Fellingshäuser sausage goulash comes from the recipe collection of the Leib family from Fellingshausen in the German region of Hesse. Karoline Leib must have prepared this dish from time to time in her small kitchen in the house, which brought variety to the otherwise rather repetitive everyday meal of various soups and bread.

Ingredients:

6 coarse sausages, boiled

150 grams of onions, diced

50 grams of clarified butter

3 gherkins, cut into strips

200 millilitres of gravy or vegetable broth

400 grams jacket potatoes, diced

Method:

1. Scald the sausages with boiling water.

2. Cut the sausages into slices.

3. Melt the clarified butter in a roasting pan and fry the sausage pieces in it.

4. Add the diced onions and sauté.

5. Cut the gherkins into strips; add to the sausage and onions and stew.

6. Deglaze with the roast or vegetable stock.

7. Then add the diced jacket potatoes and season with marjoram.

8. Simmer for a while and serve.
