Two types of Christmas biscuits

In the estate of my dear friend Helma, I found an old, blue exercise book belonging to one of her relatives. A variety of Christmas biscuit recipes are written densely in Kurrent script on lined paper. Two different biscuits, one with
one with lemon zest and one with walnuts or hazelnuts, are child's play to make and both taste delicious.

Method:

Lemon Christmas biscuits

  1. Butter, sugar, the zest of half a lemon and an egg are mixed well together.

  2. Gradually add the flour mixed with the baking powder to the butter and egg mixture.

  3. Use two teaspoons to scoop out portions of dough and place these heaps on a greased baking tray.

4 Carefully brush with egg and sprinkle with a little sugar.

  1. Bake in an oven preheated to 180 °C for 10–15 minutes

Nut Christmas biscuits

  1. Mix together the butter, sugar, ground walnuts or hazelnuts, almond essence and egg.

  2. Gradually stir in the flour, alternating with the spoonfuls of water.

  3. Using two teaspoons, scoop out portions of dough and place these heaps on a greased baking tray.

4 Carefully brush with the beaten egg and sprinkle with sugar.

  1. Bake in an oven preheated to 180 °C for 10-15 minutes.
