Tailor's lobules
Tailor's lobules are a dish that was particularly popular with children at the beginning of the 20th century. It is a pasta dough that is cut into thin square lobules and cooked in sweetened vanilla milk. If you like rice pudding or steamed dumplings, you will love this light meal. It can be served hot or cold.
Method:
1 Place the flour on a pasta board.
Make a well in the centre of the flour with a tablespoon and add the eggs.
Knead the pasta dough, shape into a ball, cover and leave to rest for a few minutes.
4 Meanwhile, put the milk, sugar and vanilla pod in a pan on the hob and heat up.
Roll out the pasta dough thinly with a rolling pin, repeatedly removing the pasta sheet from the pasta board and turning it over.
Cut square lobules from the thin pasta dough using a knife or pastry wheel.
7 Meanwhile, bring the milk to the boil.
Carefully add the pasta dough lobules and cook in the milk for 10–20 minutes until they are cooked.
Serve warm or cold in bowls or deep plates.
