Semolina slices
This recipe for semolina slices can be found under the heading "Nährmittel- und Brotgerichte und Eintöpfe" in the "Schriftenreihe für die praktische Hausfrau" in the booklet entitled "Trotz wenig Zeit gut gekocht". It was published in 1943 by the Legal Committee for Economic Enlightenment and could be purchased for 30 pfennigs each. It could be obtained from the offices of the NS Women's Association and the German Women's Organisation. These booklets were intended to teach the women of the time how to budget frugally during wartime and to show them alternatives on how to conjure up a tasty and nutritious meal for their families despite the limited food available. This type of booklet was part of the propaganda of the National Socialist rulers and the recipes it contained were designed for one or four people.
Method:
- Bring the milk, salt and fat to the boil in a pan.
- Stir in the semolina and cook for about 10 minutes while stirring until the mixture separates from the bottom of the pan.
- Finely chopped herbs are then mixed in.
4 Spread the mixture about 2 centimetres thick on an enamel or porcelain plate and leave to cool. - Cut off rectangles later and fry them in a pan in hot fat or layer them in a greased oven dish and bake in the oven sprinkled with yeast flakes.
- Serve with vegetables or salad.
Tip: For the sweet version, the semolina slices are cooked without herbs, but with a little lemon zest and sugar instead. Serve with compote.
