This Christmas biscuit recipe comes from a small school notebook belonging to the family of my dear friend Helma in Waldems, dating from between 1900 and 1918. It is very easy to make, looks good, tastes wonderfully chocolatey, but is not too sweet.
60 grams butter
140 grams sugar
1 tablespoon vanilla sugar
1 egg
250 grams flour
1/2 packet baking powder
50 grams cocoa powder
8 tablespoons milk
1. Mix the butter, sugar and vanilla sugar in a bowl.
2. Add the egg.
3. Mix the flour, baking powder and cocoa together.
4. Add these dry ingredients spoonful by spoonful to the butter and egg mixture, alternating with the milk, and form everything into a ball of dough.
5. Roll out portions of dough to the thickness of a pencil and shape into rings.
6. Place on a greased baking tray.
7. Bake the rings in a preheated oven at 180°C for 10-15 minutes.
8. Leave to cool on a wire rack, store in biscuit tins and enjoy with tea or coffee.
