Plutocrats Salad

This salad, which probably dates back to the 1950s and was made by my great-aunt Trude, is very rich and was therefore served as the main course for dinner at home. Unfortunately, we don't know why it was given this imaginative name of the "reign of riches". It probably has something to do with the varied, filling ingredients of tomatoes, cheese, eggs and sausage.

Ingredients:

6 tomatoes, cut into eighths

About 200 grams Swiss Emmental cheese, in cubes

1/2 ring of sausage, diced

3-4 eggs, hard-boiled

1-2 onions

1-2 tablespoons apple or wine vinegar

2-4 tablespoons olive oil

1 pinch of sugar

salt

pepper

1-2 teaspoons hot or English mustard

Method:

1. Hard boil the eggs, rinse, peel and pass through an egg harp or cut into small pieces.

2. Cut the tomatoes into eighths.

3. Cut the Emmental cheese into cubes.

4. Cut the sausage into cubes.

5. Finely chop the onions.

6. Place all the ingredients in a salad bowl.

7. Make the salad dressing from the vinegar, oil, sugar, salt, pepper and hot mustard and pour over the salad.

8. Mix everything together and leave to marinate in a cool place.
