"Matte" cake from Nieder-Gemünden
This "matte" cake has always been baked in the bakehouse in the village of Nieder-Gemünden in the Vogelsberg district. A savoury cake on bread dough with a jacket potato, layered quark and sour cream topping, which could also be topped with bacon.
Method:
- Roll out the bread dough thinly on a greased baking tray and prick it several times with a fork so that it can bake evenly in the oven later.
- Mash the cooked potatoes through a potato ricer into a large bowl while still warm, if possible.
- Chop the onion and add to the potatoes.
- Add the quark, eggs, flour, sour cream, salt, salad oil and milk if required and mix everything together well.
- Spread the bread dough with the potato mixture and sprinkle with diced bacon if desired.
