"Matte" cake from Nieder-Gemünden

This "matte" cake has always been baked in the bakehouse in the village of Nieder-Gemünden in the Vogelsberg district. A savoury cake on bread dough with a jacket potato, layered quark and sour cream topping, which could also be topped with bacon.

Method:

  1. Roll out the bread dough thinly on a greased baking tray and prick it several times with a fork so that it can bake evenly in the oven later.
  2. Mash the cooked potatoes through a potato ricer into a large bowl while still warm, if possible.
  3. Chop the onion and add to the potatoes.
  4. Add the quark, eggs, flour, sour cream, salt, salad oil and milk if required and mix everything together well.
  5. Spread the bread dough with the potato mixture and sprinkle with diced bacon if desired.
