Apple soup with snow topping

Apple soup is a refreshing dessert at harvest time. It is topped off with a dollop of whipped egg whites.

Method:

1 Peel, core and dice the apples.
2. bring the apples and water to the boil on the hob.
3. pass the softly cooked apples through a blender.
4. mix the cornflour with the sugar and 1/4 litre of water.
5. mix the strained apples with the cornflour and bring to the boil again, stirring until it thickens slightly.
6 Beat the egg whites until stiff.
7. add the sugar and continue to whisk.
8. put a pan of water on the hob, cut off individual mounds of snow with a teaspoon and place them on the water.
9. allow the snowcaps to cook and then place on top of the apple soup.
10. pour into bowls and enjoy.
